Ingredient Substitutions List

Next week, most of us are going to be on an insane cooking spree.  In spite of the best laid plans, I suspect that we’re all going to forget SOMETHING on the grocery list.  We can often avoid the emergency run to the corner store for some random (OVERPRICED) thing we forgot by just knowing what can be substituted for our missing ingredient.

With that in mind, I did some searching and typed up a list of substitutions for common ingredients.  I’m sure there are many more that I’m not aware of.  If you have a substitution not listed here, please share it in the comments.

1 c sifted cake flour 7/8 c sifted all purpose flour
1 c sifted cake flour 1 c minus 2 tbsp all purpose flour PLUS 2 tbsp cornstarch
1 c self rising flour 1 c all purpose flour + 1 1/2 tsp baking powder + 1/2 tsp salt
1 c all purpose flour 1 c whole wheat flour
1 c honey 1 1/4 c sugar + 1/4 c liquid
2 large eggs 3 small eggs
2 egg yolks 1 medium egg
1 oz  or      1 square unsweetened chocolate 3 tbsp unsweetened cocoa powder + 1 tbsp margarine
6 oz or        6 squares semi-sweet chocolate melted 1 c semisweet choc chips melted
1 tbsp cornstarch 2 tbsp flour OR 2 tsp quick tapioca OR 2 egg yolks
1 tsp lemon juice 1/2 tsp vinegar
1 tbsp fresh herbs 1 tsp dried herbs
1 clove garlic 1/8 tsp garlic powder
1 lb fresh mushrooms 3 oz dried OR 6 oz canned
1 c whipping cream, whipped 2 c thawed whipped topping
1 c whipping cream 1/3 c melted butter + 3/4 c milk
1 c light cream 3 tbsp melted butter + 3/4 c milk
1 c ricotta cheese 1 c cottage cheese, liquid drained
1 c buttermilk 1 c plain yogurt
1 c buttermilk 1 tbsp lemon juice + 7/8 c milk
1 c whole milk 2 tsp melted butter + 1 c fat free milk
1 c sour cream 3 tbsp melted butter + 7/8 c buttermilk  OR 1 c plain yogurt
Any Pecans equivalent amount walnuts, almonds, or hazelnuts
Any chunky peanut butter equivalent amount creamy peanut butter
1 c bread crumbs 3/4 c cracker crumbs
1 c butter 1 c margarine OR 7/8 c vegetable oil OR 7/8 c shortening (butter flavored)
1 lb lard 2 c shortening OR butter
1 c sugar 3/4 c honey
1 c sugar (in baking) 7/8 c honey + a pinch of baking soda
1 c brown sugar 1 c white sugar + 2 tbsp molasses
1 c molasses (baking) 1 c sugar (omit baking soda & use baking powder)
1/2 c red or white wine 2 tbsp sherry or port
3/4 c maple syrup 3/4 c pancake syrup or corn syrup
1 tsp pumpkin pie spice 1/4 tsp nutmeg + 1/4 tsp ginger + 1/2 tsp cinnamon
1 lb tomatoes 3 medium or 3/4 c sauce or 1/4 c paste
8 oz tomato sauce 2/3 c water + 1/3 c tomato paste
3 c tomato juice 2 1/2 c water + 6 oz tomato paste + 3/4 tsp salt
1 large marshmallow 10 minis with cornstarch dusted off
1 c granulated sugar 1 3/4 c powdered sugar (not for baking)
tsp fresh ginger 1/4 tsp powdered or 2 tsp crystallized ginger
1 head fresh dill 2 tsp dill seed
1/2 tsp vinegar 1 tsp lemon juice
1 tsp dry mustard 1 tbsp prepared mustard or 1/2 tsp mustard seed
1/4 c rum 1 tsp rum extract plus water to make 1/4 cup
1 c sweetened condensed milk 1 c and 2 tbsp powdered milk + 1/2 c warm water + 3/4 c sugar
1/2 tsp cream of tartar 1 1/2 tsp lemon juice or vinegar
1 tbsp maple sugar 1 tbsp granulated sugar + dash maple extract

Great substituation ideas…. our insane cooking is today in preparation for our early THXgiving….thanks for passing those along.

May I make one teensy suggestion? 1 c. cake flour= 1 c. all-purpose flour less 2T., plus 2T. cornstarch. That has always worked for me.
